Wine Inspired Culinary Delights

 

Chicken and Noodle Salad

with Sesame-Ginger Dressing

3 whole boneless chicken breasts


24 oz. thin Chinese noodles

 

1 cup of frozen sweet peas, thawed

 

˝ cup sesame paste

 

˝ cup slivered almonds

 

˝ cup julian sliced red pepper

 

Dressing:
6 clove garlic, minced

 

6 scallions, sliced

 

5 ˝ T soy sauce

 

4 T white wine

 

4 T sesame oil


4 T rice vinegar


2 T ginger, minced


1 T sugar


1 T hot chili oil

 

1 T olive oil

 

6 T chopped cilantro, garnish

 

 

Cooking Instructions

Roast the chicken breasts for 25 minutes at 375 degrees. Cool. Cook the noodles. Drain and run cold water over them.  Sauté garlic and scallions in olive oil. Combine the chicken, noodles, peas, almonds, and pepper and toss with the dressing. Garnish with the cilantro.
